Description
A comforting and nutritious soup made with cauliflower, chicken, and anti-inflammatory spices.

- 8 oz (250g) chicken breast, cooked
- 2 1/2 cups cauliflower florets
- 1 carrot, chopped
- 1 1/2 tbsp ginger, grated
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1 tsp dried mint
- 2 tbsp olive oil
- Salt, to taste
- More black pepper, to taste
Instructions
- Start by heating 1 tbsp olive oil in a small cooking pot. Add chopped onions, minced garlic, turmeric, and black pepper.
- Sauté this mixture for 2-3 minutes until the onions become translucent and fragrant.
- Next, add the cauliflower florets and 2 cups of chicken broth (or water with a pinch of salt). Cover the pot and cook at medium-high for around 7 minutes, allowing the cauliflower to soften.
- Afterward, toss in the grated ginger, mint, and chopped carrot. Continue cooking for another 5 minutes or until the carrot is tender.
- Use an immersion blender to blend the soup halfway, thickening it while retaining some texture.
- Add the cooked chicken, salt, and additional black pepper if needed, along with another cup of broth (or water) to achieve your desired consistency.
- Let it cook for 5-6 more minutes, allowing all the flavors to meld beautifully.
- Finish by drizzling in the remaining tbsp of olive oil and serve warm.
Notes
Customize with any vegetables you prefer. For a spicier kick, add cayenne pepper.
