Ingredients

  • 2 cups dry orzo pasta
  • 1 red bell pepper, chopped
  • 1 English cucumber, chopped
  • 1/2 red onion, finely diced
  • 6 oz feta cheese, crumbled
  • 2 to 3 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • Zest and juice of 1 lemon (1.5 to 2 oz lemon juice)
  • 1/2 cup extra-virgin olive oil
  • 1 tbsp honey
  • 1/2 tsp sea salt
  • 1/2 tsp cracked black pepper

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and rinse with cold water to cool down.
  2. In a large mixing bowl, combine the cooled orzo with the red bell pepper, cucumber, red onion, and crumbled feta.
  3. In a separate bowl, whisk together minced garlic, lemon zest, lemon juice, olive oil, honey, sea salt, and black pepper to create the dressing.
  4. Pour the dressing over the salad ingredients and toss gently to combine.
  5. Add the chopped parsley and basil into the bowl, mixing well to ensure that every ingredient gets coated with the dressing.
  6. Taste and adjust seasonings if necessary. Serve immediately, or chill for a bit to let the flavors meld together.
