- 2 cups dry orzo pasta
- 1 red bell pepper, chopped
- 1 English cucumber, chopped
- 1/2 red onion, finely diced
- 6 oz feta cheese, crumbled
- 2 to 3 garlic cloves, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- Zest and juice of 1 lemon (1.5 to 2 oz lemon juice)
- 1/2 cup extra-virgin olive oil
- 1 tbsp honey
- 1/2 tsp sea salt
- 1/2 tsp cracked black pepper
Instructions
- Cook the orzo according to package instructions until al dente. Drain and rinse with cold water to cool down.
- In a large mixing bowl, combine the cooled orzo with the red bell pepper, cucumber, red onion, and crumbled feta.
- In a separate bowl, whisk together minced garlic, lemon zest, lemon juice, olive oil, honey, sea salt, and black pepper to create the dressing.
- Pour the dressing over the salad ingredients and toss gently to combine.
- Add the chopped parsley and basil into the bowl, mixing well to ensure that every ingredient gets coated with the dressing.
- Taste and adjust seasonings if necessary. Serve immediately, or chill for a bit to let the flavors meld together.
Notes
For best flavor, prepare the salad just before serving. Store dressing separately if making in advance.
