- Optional: 1 tablespoon maple syrup for extra sweetness
Instructions
- Wash and slice zucchini into 1/8-inch uniform slices using a mandoline.
- Salt slices and let sit for 20 minutes to remove excess moisture.
- Mix cinnamon, sugar, and salt in a small bowl.
- Combine melted coconut oil and vanilla extract in separate bowl.
- Brush zucchini slices with oil mixture and coat with cinnamon sugar mixture.
- Preheat air fryer to 350ยฐF.
- Air fry in single layers for 10-12 minutes, flipping halfway.
- Cool on wire rack for 10 minutes until crispy.
Notes
- Use a mandoline for consistent slice thickness.
- Donโt overcrowd the air fryer basket.
- Watch carefully during final minutes to prevent burning.
- Allow to cool completely before storing.
- Can substitute coconut sugar or monk fruit sweetener for regular sugar.
