- 2 medium zucchini (approximately 1 pound), cut into ยผ-inch rounds or sticks
- 2 medium yellow squash (approximately 1 pound), cut into ยผ-inch rounds or sticks
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning blend
- ยฝ teaspoon paprika
- ยฝ teaspoon onion powder
- ยผ teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons freshly grated Parmesan cheese (optional)
- Fresh herbs for garnish
Instructions
- Wash and dry zucchini and squash thoroughly. Cut into ยผ-inch rounds or sticks.
- In a large bowl, toss vegetables with olive oil and seasonings until evenly coated.
- Preheat air fryer to 375ยฐF (190ยฐC) for 3 minutes.
- Arrange seasoned vegetables in a single layer in the air fryer basket.
- Cook for 6-7 minutes, then flip vegetables.
- Continue cooking for 6-8 minutes until golden brown and tender.
- If using Parmesan, add during the last 2 minutes of cooking.
- Garnish with fresh herbs and serve immediately.
Notes
- For extra crispiness, salt vegetables and let sit for 15 minutes before cooking
- Cook in batches to avoid overcrowding
- Different air fryer models may require slight temperature adjustments
- Can substitute Parmesan with nutritional yeast for dairy-free option
