Ingredients

Instructions

  1. In a large pot, heat a little olive oil over medium heat.
  2. Add the chopped onion, celery, carrots, and garlic; sauté until softened.
  3. Add the chicken breast, chicken broth, turmeric, and ginger.
  4. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the chicken is cooked through.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Season with salt and pepper.
  7. Serve hot, garnished with fresh parsley.
