- 4 cups chicken broth
- 2 carrots, diced
- 2 stalks celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp turmeric

- Fresh parsley for garnish
Instructions
- In a large pot, heat a little olive oil over medium heat.
- Add the chopped onion, celery, carrots, and garlic; sauté until softened.
- Add the chicken breast, chicken broth, turmeric, and ginger.
- Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
