- 1 cup diced apples
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp apple cider (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter and both sugars together until light and fluffy.
- Add the egg, vanilla extract, and apple cider to the mixture; mix until smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Gently fold in the diced apples using a spatula.
- Scoop the dough onto the prepared baking sheet, spacing them evenly.
- Bake for 10–12 minutes or until the edges turn golden.
- Allow the cookies to cool, then drizzle with an apple cider glaze made from powdered sugar and a splash of apple cider for flavor.
Notes
Chill the dough for 30 minutes before baking to maintain cookie shape. Consider adding a sprinkle of coarse sea salt before baking for enhanced flavor.
