Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and both sugars together until light and fluffy.
  3. Add the egg, vanilla extract, and apple cider to the mixture; mix until smooth.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Gently fold in the diced apples using a spatula.
  7. Scoop the dough onto the prepared baking sheet, spacing them evenly.
  8. Bake for 10–12 minutes or until the edges turn golden.
  9. Allow the cookies to cool, then drizzle with an apple cider glaze made from powdered sugar and a splash of apple cider for flavor.

Notes

Chill the dough for 30 minutes before baking to maintain cookie shape. Consider adding a sprinkle of coarse sea salt before baking for enhanced flavor.
