Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
  2. In a large bowl, whisk together the 1 ½ cups all-purpose flour, ½ cup granulated sugar, 1 ½ teaspoons baking powder, ½ teaspoon ground cinnamon, and ¼ teaspoon salt.
  3. In a separate medium bowl, combine the egg, milk, melted unsalted butter, and vanilla extract; whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just moistened, leaving some lumps.
  5. Gently fold in the chopped apples.
  6. For the streusel topping, mix together ½ cup all-purpose flour, ¼ cup brown sugar, and ¼ teaspoon cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
  7. Divide the muffin batter evenly among the 12 muffin cups and sprinkle the streusel topping generously over each muffin.
  8. Bake for 18-22 minutes, checking for doneness with a skewer.
  9. Allow muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
