Description

Delicious apple crisp shortbread bars combining tender apples, warm spices, and a buttery shortbread base into portable bites.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 cup oats
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 4 cups apples, peeled and sliced
  • 1 tablespoon lemon juice
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats for topping
  • Vanilla ice cream (optional, for serving)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Gradually mix in the flour and oats until well combined. Press two-thirds of the mixture into the bottom of the prepared dish.
  4. In another bowl, toss the sliced apples with lemon juice, cinnamon, nutmeg, and brown sugar. Spread the apple mixture over the shortbread base.
  5. Sprinkle the remaining shortbread mixture over the apples and top with additional oats.
  6. Bake for 25-30 minutes, or until the topping is golden brown.
  7. Allow to cool slightly before cutting into bars.
  8. Serve warm with a scoop of vanilla ice cream if desired.

Notes

For a thicker base, increase the proportions of butter and flour slightly. Use a mix of sweet and tart apples for a complex flavor.
