- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 cup oats
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 4 cups apples, peeled and sliced
- 1 tablespoon lemon juice
- 1/4 cup brown sugar
- 1/4 cup rolled oats for topping
- Vanilla ice cream (optional, for serving)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Gradually mix in the flour and oats until well combined. Press two-thirds of the mixture into the bottom of the prepared dish.
- In another bowl, toss the sliced apples with lemon juice, cinnamon, nutmeg, and brown sugar. Spread the apple mixture over the shortbread base.
- Sprinkle the remaining shortbread mixture over the apples and top with additional oats.
- Bake for 25-30 minutes, or until the topping is golden brown.
- Allow to cool slightly before cutting into bars.
- Serve warm with a scoop of vanilla ice cream if desired.
Notes
For a thicker base, increase the proportions of butter and flour slightly. Use a mix of sweet and tart apples for a complex flavor.
