  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups honey crisp apples, peeled and chopped
  • 1/2 cup chopped walnuts (optional)
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons brown sugar (for icing)
  • 1 tablespoon milk (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, cream the butter and both sugars until light and fluffy.
  4. Add the eggs, one at a time, and mix well. Stir in the vanilla.
  5. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with flour.
  6. Fold in the chopped apples and walnuts, if using.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. For the icing, whisk together powdered sugar, brown sugar, and milk until smooth.
  10. Drizzle the icing over the warm cake before serving.

Notes

Use fresh honey crisp apples for the best flavor and keep ingredients at room temperature for a uniform batter.
