- 1 lb. dried pinto beans
- 6 strips bacon, diced
- 1 yellow onion, diced
- 1 jalapeño, diced
- 3 garlic cloves, minced
- 1 tablespoon ancho chile powder
- 1 teaspoon ground cumin
- 1/2 teaspoon Mexican oregano
- 2 bay leaves
- 24 oz dark lager (like Negro Modelo)
- 1 1/2 cups chicken broth or water
- 1 chicken bouillon cube
- Kosher salt to taste
- 1/4 white onion, finely diced
- 2 large ripe tomatoes, diced
- 1/2 jalapeño, diced
- 1/4 cup minced cilantro
- 2 limes, juiced
Instructions
- Soak the dried pinto beans in cold water with a tablespoon of kosher salt for at least eight hours or overnight.
- Cook the diced bacon in a large Dutch oven over medium-low heat until crispy, reserving the fat.
- Increase heat to medium and add diced yellow onion and jalapeño, sautéing for 2-3 minutes until softened.
- Add minced garlic, ancho chile powder, ground cumin, and Mexican oregano, and cook for an additional minute.
- Rinse and drain the soaked beans and add to the Dutch oven with dark lager and chicken broth (or water). Toss in bay leaves and chicken bouillon cube, season with salt and pepper.
- Cover, reduce heat, and simmer for 90 minutes, then remove the lid and simmer for another 30 minutes, stirring occasionally.
- Prepare pico de gallo by mixing finely diced white onion, tomatoes, minced cilantro, and diced jalapeño with lime juice, and let sit for at least an hour.
- Once the beans are tender, discard bay leaves, taste, and adjust seasoning as necessary. Stir in a cup of prepared pico de gallo and serve garnished with remaining pico de gallo and cilantro.

Use fresh ingredients for the best flavor. Consider adding toppings like crumbled cheese or avocado.
