Ingredients

- 3 cups water
- 3 cups whole milk (or almond, cashew, soy, oat, or another plant-based milk)
- 5 tablespoons loose leaf black tea (Assam)
- 1 inch piece ginger, thinly sliced
- 10 whole cloves
- 15 green cardamom pods
- 1 1/2 cinnamon sticks (about 2 inches)
- 5 to 10 teaspoons of brown sugar
- 15 black peppercorns (optional)
- 5 star anises (optional)
- 1/2 teaspoon fennel seeds (optional)
Instructions
- Crack the cardamom pods, cloves, and peppercorns if you are using them. Place them in a saucepan or teapot. Add the thinly sliced ginger, cinnamon sticks, and black tea. If desired, throw in the star anises and fennel seeds for extra spice. Pour in the water.
- Bring the mixture to a low boil and cover. Let it steep on low heat for a minimum of 10 minutes. For a stronger infusion, continue to simmer on very low heat for an hour or two, allowing the spices to release their full flavor.
- Add the milk and your desired amount of brown sugar. Stir the mixture while heating it until it simmers again. Allow it to simmer for a few minutes to let the milk extract the oils from the spices.
- Finally, pour the chai into mugs or glasses through a strainer and enjoy the delicious results.
Notes
Experiment with the proportions of spices according to your taste. Try different sweeteners like honey or maple syrup for variations.
