Ingredients

  • 1 can black beans, rinsed and drained

  • 1 bell pepper, diced (preferably red or yellow)

  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced avocados, corn, black beans, red onion, bell pepper, and cilantro.
  2. Squeeze the juice of the lime over the mixture.
  3. Gently toss to combine, being careful not to mash the avocados.
  4. Season with salt and pepper to taste.
