- 1 can black beans, rinsed and drained
- 1 small red onion, diced
- 1 bell pepper, diced (preferably red or yellow)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced avocados, corn, black beans, red onion, bell pepper, and cilantro.
- Squeeze the juice of the lime over the mixture.
- Gently toss to combine, being careful not to mash the avocados.
- Season with salt and pepper to taste.
- Serve immediately as a dip with tortilla chips or as a side dish.
