- 1 cup granulated sugar
- 2 eggs (room temperature)
- 1 cup whole milk
- 1/2 cup all-purpose flour
- 1/4 cup fresh lemon juice (not bottled)
- 1 tbsp lemon zest (from fresh lemons)
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
- Combine melted butter, sugar, eggs, milk, flour, fresh lemon juice, lemon zest, vanilla extract, and salt in a blender or large bowl.
- Blend or whisk the mixture until smooth, ensuring no lumps remain.
- Pour the mixture evenly into the muffin cups, filling each about two-thirds full.
- Bake for 28–32 minutes, until the tops are lightly golden and centers are just set.
- Cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
- Chill the pies for at least one hour before serving.
Notes
For best results, use fresh lemon juice and let the eggs reach room temperature before mixing.
