Ingredients

  • 1 cup granulated sugar
  • 2 eggs (room temperature)
  • 1 cup whole milk
  • 1/2 cup all-purpose flour
  • 1/4 cup fresh lemon juice (not bottled)
  • 1 tbsp lemon zest (from fresh lemons)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
  2. Combine melted butter, sugar, eggs, milk, flour, fresh lemon juice, lemon zest, vanilla extract, and salt in a blender or large bowl.
  3. Blend or whisk the mixture until smooth, ensuring no lumps remain.
  4. Pour the mixture evenly into the muffin cups, filling each about two-thirds full.
  5. Bake for 28–32 minutes, until the tops are lightly golden and centers are just set.
  6. Cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
  7. Chill the pies for at least one hour before serving.

Notes

For best results, use fresh lemon juice and let the eggs reach room temperature before mixing.
