Ingredients

  • 1 cup cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1 red onion, diced
  • 3 cloves garlic, minced
  • 200g feta cheese
  • 2 cups baby spinach, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 4 large eggs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In individual ramekins or a larger oven-safe dish, combine the tomatoes, bell pepper, onion, garlic, and feta cheese.
  3. Drizzle with olive oil.
  4. In a small bowl, mix the oregano, salt, thyme, black pepper, and red pepper flakes. Sprinkle over the vegetable and feta mixture.
  5. Bake for 25 minutes until vegetables are roasted.
  6. Stir in the chopped spinach gently.
  7. Create wells in the mixture and crack an egg into each well.
  8. Return to the oven and bake for an additional 10 minutes until the eggs are set but the yolks are still runny.

Notes

For variations, feel free to experiment with different vegetables, such as zucchini or kale, and adjust the spices to your liking.
