- 8 chicken thighs (bone-in, skin and excess fat removed)
- 1 onion (thinly sliced)
- 1 ripe tomato (skin removed and grated)
- 2–3 tablespoons of extra virgin olive oil
- 1 lemon (juice)
- 2 sprigs of fresh rosemary (optional)
- 5 garlic cloves (minced)
- 1 teaspoon of oregano
- 1 teaspoon of smoked paprika
- 1 teaspoon of cumin
- 1 teaspoon of onion powder
- ½ teaspoon of white pepper
- Salt (to taste)
Instructions
- Make the marinade by combining olive oil, lemon juice, sliced onion, grated tomato, minced garlic, oregano, smoked paprika, cumin, onion powder, white pepper, and salt in a large bowl. Mix well until everything is thoroughly combined.
- Add the chicken thighs to the marinade and toss to ensure each piece is well-coated. Marinate for at least 30 minutes.
- Preheat the oven to 375°F (190°C). Transfer marinated chicken thighs to a baking dish in a single layer. Pour any remaining marinade over the chicken.
- If using, place sprigs of fresh rosemary on top. Bake for 45 to 50 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy and golden brown.
- Let the chicken rest for a few minutes before serving.
Notes
For added flavor, consider adding vegetables like bell peppers or zucchini to the baking dish. Use a meat thermometer to ensure chicken is fully cooked.
