Ingredients

  • 8 chicken thighs (bone-in, skin and excess fat removed)
  • 1 onion (thinly sliced)
  • 1 ripe tomato (skin removed and grated)
  • 23 tablespoons of extra virgin olive oil
  • 1 lemon (juice)
  • 2 sprigs of fresh rosemary (optional)
  • 5 garlic cloves (minced)
  • 1 teaspoon of oregano
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of onion powder
  • ½ teaspoon of white pepper
  • Salt (to taste)

Instructions

  1. Make the marinade by combining olive oil, lemon juice, sliced onion, grated tomato, minced garlic, oregano, smoked paprika, cumin, onion powder, white pepper, and salt in a large bowl. Mix well until everything is thoroughly combined.
  2. Add the chicken thighs to the marinade and toss to ensure each piece is well-coated. Marinate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C). Transfer marinated chicken thighs to a baking dish in a single layer. Pour any remaining marinade over the chicken.
  4. If using, place sprigs of fresh rosemary on top. Bake for 45 to 50 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy and golden brown.
  5. Let the chicken rest for a few minutes before serving.

Notes

For added flavor, consider adding vegetables like bell peppers or zucchini to the baking dish. Use a meat thermometer to ensure chicken is fully cooked.
