- 1/2 teaspoon (2.5 g) Prague Powder #1
- Natural or synthetic sausage casings (as needed)
Instructions
- Preheat your oven to 200°F (93°C).
- In a large mixing bowl, combine ground venison and ground beef.
- Add water to the meat mixture and mix thoroughly.
- Sprinkle in kosher salt, garlic powder, and onion powder.
- Add ground black pepper, mustard seeds, and crushed red pepper flakes.
- Mix in ground coriander, smoked paprika, and curing salt.
- Stir all ingredients until evenly combined.
- Soak sausage casings in warm water to make them pliable.
- Rinse the casings thoroughly under cold water.
- Stuff the meat mixture into the prepared sausage casings.
- Form the stuffed casings into logs about 2 inches in diameter.
- Place the sausage logs on a baking sheet.
- Bake in the preheated oven for 4 hours.
- Remove sausages from the oven and let them cool completely.
- Store in the refrigerator or freeze for later use.
