  • 1/2 teaspoon (2.5 g) smoked paprika
  • 1/2 teaspoon (2.5 g) Prague Powder #1
  • Natural or synthetic sausage casings (as needed)

Instructions

  1. Preheat your oven to 200°F (93°C).
  2. In a large mixing bowl, combine ground venison and ground beef.
  3. Add water to the meat mixture and mix thoroughly.
  4. Sprinkle in kosher salt, garlic powder, and onion powder.
  5. Add ground black pepper, mustard seeds, and crushed red pepper flakes.
  6. Mix in ground coriander, smoked paprika, and curing salt.

  8. Soak sausage casings in warm water to make them pliable.
  9. Rinse the casings thoroughly under cold water.
  10. Stuff the meat mixture into the prepared sausage casings.
  11. Form the stuffed casings into logs about 2 inches in diameter.
  12. Place the sausage logs on a baking sheet.
  13. Bake in the preheated oven for 4 hours.
  14. Remove sausages from the oven and let them cool completely.
