Wholesome and satisfying Banana Oatmeal Bars made with ripe bananas and rolled oats, perfect for a quick breakfast or a healthy snack.
Ingredients

- 2 ripe bananas
- 2 cups rolled oats
- 1/2 teaspoon cinnamon
- 1/4 cup honey or maple syrup
- 1/4 cup peanut butter or almond butter
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 cup chocolate chips or nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add rolled oats, cinnamon, honey (or maple syrup), peanut butter (or almond butter), vanilla extract, and baking powder to the mashed bananas. Mix until well combined.
- Stir in chocolate chips or nuts if desired.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 20-25 minutes or until the edges are golden brown.
- Allow to cool before cutting into bars. Enjoy!
Notes
For best results, use very ripe bananas and store leftovers in an airtight container.
