- 1 1/2 cups crushed vanilla wafers
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 ripe bananas, mashed
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1/4 cup all-purpose flour
- 1 cup crushed vanilla wafers (for topping)
- 1/4 cup chopped pecans
- 2 tablespoons melted butter (for topping)
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
- Combine crushed vanilla wafers, sugar, and melted butter in a bowl.
- Press the mixture into the bottom of the greased pan.
- Beat the cream cheese and sugar in a bowl until smooth.
- Incorporate mashed bananas, eggs, vanilla extract, sour cream, and flour; mix until creamy.
- Pour the mixture over the prepared crust.
- Mix the topping ingredients: crushed vanilla wafers, pecans, and melted butter.
- Sprinkle the topping over the cheesecake filling.
- Bake for 55-60 minutes until the edges are set.
- Turn off the oven and let the cheesecake cool inside with the door slightly ajar for an hour.
Notes
Let the cheesecake cool completely before removing it from the springform pan for cleaner slices. Refrigerate for at least 4 hours or overnight for the best flavor.
