Ingredients

- 2 cups cooked rice
- 1 cup chicken, diced
- 2 eggs, beaten
- 1 cup mixed colorful veggies (bell peppers, peas, carrots)
- 1/4 cup green onions, chopped
- 3 tablespoons bang bang sauce
- 2 tablespoons soy sauce
- 2 tablespoons oil for frying
- Salt and pepper to taste
Instructions
- Heat oil in a large pan or wok over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Push the chicken to the side of the pan and add the beaten eggs, scrambling them until fully cooked.
- Stir in the mixed veggies and cook until slightly tender.
- Add the cooked rice, bang bang sauce, and soy sauce, mixing everything well.
- Cook for a few more minutes until heated through.
- Season with salt and pepper to taste, and garnish with chopped green onions before serving.
Notes
For added spice, consider adding diced jalapeños or a dash of hot sauce. You can also use shrimp or tofu for variety.
