Description

A vibrant and flavorful fried rice dish enhanced with bang bang sauce, chicken, and colorful veggies, perfect for weeknight meals.


Ingredients

  • 2 cups cooked rice
  • 1 cup chicken, diced
  • 2 eggs, beaten
  • 1 cup mixed colorful veggies (bell peppers, peas, carrots)
  • 1/4 cup green onions, chopped
  • 3 tablespoons bang bang sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons oil for frying
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pan or wok over medium heat.
  2. Add the diced chicken and cook until browned and cooked through.
  3. Push the chicken to the side of the pan and add the beaten eggs, scrambling them until fully cooked.
  4. Stir in the mixed veggies and cook until slightly tender.
  5. Add the cooked rice, bang bang sauce, and soy sauce, mixing everything well.
  6. Cook for a few more minutes until heated through.
  7. Season with salt and pepper to taste, and garnish with chopped green onions before serving.

Notes

For added spice, consider adding diced jalapeños or a dash of hot sauce. You can also use shrimp or tofu for variety.
