Ingredients
Scale
- 1 lb fresh salmon (skinless and cut into bite-sized cubes)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup panko breadcrumbs
- 1 tbsp olive oil or spray for crisping
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to spice level)
- 1 tsp honey (optional)
- Juice of ½ lime
- 2 cups cooked jasmine rice (or cauliflower rice)
- 1 cup shredded purple cabbage
- 1 avocado (sliced)
- ½ cup shredded carrots
- 2 green onions (sliced)
- Fresh cilantro and sesame seeds for garnish
Instructions
- Preheat your oven or air fryer to the appropriate temperature.
- Season the fresh salmon cubes with garlic powder, smoked paprika, salt, and black pepper. Mix well to ensure each piece gets evenly coated with the spices.
- Coat the seasoned salmon bites in panko breadcrumbs, ensuring they are thoroughly covered for maximum crunch.
- Place the coated salmon bites on a baking sheet or in the air fryer basket, using olive oil or spray to achieve that desired golden crispiness.
- Bake or air-fry until the salmon bites are cooked through and crispy on the outside, which typically takes around 10-15 minutes depending on your method.
- Make the Bang Bang sauce by combining mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice. Mix until smooth and set aside.
- Assemble your bowls with jasmine rice or cauliflower rice as the base. Top with the crispy salmon bites and add shredded purple cabbage, avocado slices, shredded carrots, and green onions.
- Drizzle the Bang Bang sauce over the top and garnish with fresh cilantro and sesame seeds for a vibrant touch.
