  • 8 slices beef bacon
  • 2 cup (480 ml) s barbecue sauce, divided
  • 1/3 cup (80 ml) mayonnaise
  • 1/4 cup (60 ml) ranch dressing
  • 2 cup (480 ml) s shredded lettuce
  • 1/4 red onion, sliced
  • 12 squares Colby jack cheese, cracker-cut size is perfect

Instructions

  1. Combine the chicken pieces with 1 cup of the barbecue sauce in a sealable bag or container, then chill for at least 30 minutes, though overnight is best.
  2. While the chicken is soaking up flavors, fry the bacon over low heat in a pan until it turns crispy. Let it drain on a plate covered with a paper towel to remove extra oil.
  3. Heat up a grill to a medium setting and cook the chicken for approximately 3 minutes on each side, applying 1/2 cup of fresh barbecue sauce during grilling. Ensure the chicken’s internal temperature reaches 165 degrees to confirm it’s fully cooked.
  4. Cut the Hawaiian rolls in half horizontally for assembling the sandwiches. On the bottom halves, spread mayonnaise, place the chicken, and add a touch more barbecue sauce.
  5. Layer the chicken with cheese, then add bacon, sliced red onions, and shredded lettuce. Pour ranch dressing over the lettuce. **If you plan to serve these later, wait to add the ranch dressing until just before cutting and serving.
