- 5 lb (680 g) s chicken breasts, cut into 4 inch pieces
- 1 pack hawaiian rolls, 12 count
- 8 slices beef bacon
- 2 cup (480 ml) s barbecue sauce, divided
- 1/3 cup (80 ml) mayonnaise
- 1/4 cup (60 ml) ranch dressing
- 2 cup (480 ml) s shredded lettuce
- 1/4 red onion, sliced
- 12 squares Colby jack cheese, cracker-cut size is perfect
Instructions
- Combine the chicken pieces with 1 cup of the barbecue sauce in a sealable bag or container, then chill for at least 30 minutes, though overnight is best.
- While the chicken is soaking up flavors, fry the bacon over low heat in a pan until it turns crispy. Let it drain on a plate covered with a paper towel to remove extra oil.
- Heat up a grill to a medium setting and cook the chicken for approximately 3 minutes on each side, applying 1/2 cup of fresh barbecue sauce during grilling. Ensure the chicken’s internal temperature reaches 165 degrees to confirm it’s fully cooked.
- Cut the Hawaiian rolls in half horizontally for assembling the sandwiches. On the bottom halves, spread mayonnaise, place the chicken, and add a touch more barbecue sauce.
- Layer the chicken with cheese, then add bacon, sliced red onions, and shredded lettuce. Pour ranch dressing over the lettuce. **If you plan to serve these later, wait to add the ranch dressing until just before cutting and serving.
- Cover with the top halves of the rolls, cut into smaller portions, and enjoy!
