Ingredients

  • 1 cup Great Northern beans (dried)
  • 6 oz thick-cut bacon
  • 1 medium onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the Great Northern beans under cold water and soak them overnight.
  2. In a large pot over medium heat, cook the bacon until crispy. Remove the bacon but leave the drippings in the pot.
  3. Sauté the chopped onion, carrots, and celery in the bacon drippings for about 5 minutes.
  4. Add the minced garlic and sauté for an additional minute.
  5. Return the crispy bacon to the pot along with the soaked Great Northern beans.
  6. Pour in the chicken broth, sprinkle in thyme, and add salt and pepper to taste. Bring to a boil.
  7. Reduce the heat and let it simmer for about 60 minutes or until the beans are tender.
  8. Serve hot, garnished with fresh parsley if desired.
