Description

A comforting and flavorful beef enchilada casserole layered with tortillas, seasoned beef, black beans, corn, and cheese.


Ingredients

  • 1 pound ground beef
  • 1 can (10 oz) red enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is tender.
  3. Stir in the black beans, corn, enchilada sauce, garlic powder, cumin, salt, and pepper until everything melds.
  4. In a 9×13 inch baking dish, layer corn tortillas, some of the beef mixture, and a sprinkle of cheese. Repeat layers until all components are used, finishing with a layer of cheese on top.
  5. Cover the dish with foil and bake for 20 minutes.
  6. Remove the foil and bake for another 10 minutes or until the cheese bubbles and turns golden.
  7. Garnish with fresh cilantro if desired and serve hot.

Notes

For a more supple texture, heat corn tortillas in the microwave covered with a damp paper towel. Adjust seasoning to taste.
