A comforting and flavorful beef enchilada casserole layered with tortillas, seasoned beef, black beans, corn, and cheese.

- 1 pound ground beef
- 1 can (10 oz) red enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is tender.
- Stir in the black beans, corn, enchilada sauce, garlic powder, cumin, salt, and pepper until everything melds.
- In a 9×13 inch baking dish, layer corn tortillas, some of the beef mixture, and a sprinkle of cheese. Repeat layers until all components are used, finishing with a layer of cheese on top.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for another 10 minutes or until the cheese bubbles and turns golden.
- Garnish with fresh cilantro if desired and serve hot.
Notes
For a more supple texture, heat corn tortillas in the microwave covered with a damp paper towel. Adjust seasoning to taste.
