Description

A hearty and comforting beef stew, perfect for chilly days and family gatherings.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef and brown on all sides.
  3. Stir in the onions and garlic, cooking until softened.
  4. Add the carrots, potatoes, tomato paste, Worcestershire sauce, beef broth, salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce the heat to low.
  6. Cover and simmer for about 120 minutes or until the beef is tender.
  7. Adjust seasonings to taste and remove the bay leaf before serving.

Notes

For a thicker consistency, remove the lid for the last half-hour of cooking to allow some liquid to evaporate.
