Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon thyme
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the beef and brown on all sides.
- Stir in the onions and garlic, cooking until softened.
- Add the carrots, potatoes, tomato paste, Worcestershire sauce, beef broth, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce the heat to low.
- Cover and simmer for about 120 minutes or until the beef is tender.
- Adjust seasonings to taste and remove the bay leaf before serving.
Notes
For a thicker consistency, remove the lid for the last half-hour of cooking to allow some liquid to evaporate.
