Description

A hearty beef stew filled with tender beef, vegetables, and rich flavors that warms the soul on a chilly evening.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Brown the beef in batches, then remove and set aside.
  2. In the same pot, add the onion and garlic, cooking until softened.
  3. Stir in the carrots and potatoes, then return the beef to the pot.
  4. Add the beef broth, tomato paste, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about two hours or until the beef is tender.
  6. Remove the bay leaf before serving.

Notes

For best results, let the beef sit at room temperature for about 30 minutes before cooking. Use a heavy-bottomed pot like a Dutch oven.
