Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Brown the beef in batches, then remove and set aside.
- In the same pot, add the onion and garlic, cooking until softened.
- Stir in the carrots and potatoes, then return the beef to the pot.
- Add the beef broth, tomato paste, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about two hours or until the beef is tender.
- Remove the bay leaf before serving.
Notes
For best results, let the beef sit at room temperature for about 30 minutes before cooking. Use a heavy-bottomed pot like a Dutch oven.
