Description

A hearty beef stew that combines tender chunks of beef with vibrant vegetables, bringing warmth and nostalgia to every meal.


Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 4 cups beef broth
  • 3 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 bay leaf

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the beef chunks and brown on all sides.
  3. Remove the beef and set aside.
  4. In the same pot, add onion and garlic, sauté until fragrant.
  5. Add carrots and potatoes, stirring for a few minutes.
  6. Return the beef to the pot, add the beef broth, tomato paste, thyme, paprika, bay leaf, salt, and pepper.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for about 90 to 120 minutes until the beef is tender.
  9. Adjust seasoning as needed and serve hot.

Notes

Serve with crusty bread or a simple side salad. Leftovers store well and flavors improve over time.
