- 2 lbs beef chuck, cut into chunks
- 4 cups beef broth
- 3 carrots, chopped
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 bay leaf
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the beef chunks and brown on all sides.
- Remove the beef and set aside.
- In the same pot, add onion and garlic, sauté until fragrant.
- Add carrots and potatoes, stirring for a few minutes.
- Return the beef to the pot, add the beef broth, tomato paste, thyme, paprika, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for about 90 to 120 minutes until the beef is tender.
- Adjust seasoning as needed and serve hot.
Notes
Serve with crusty bread or a simple side salad. Leftovers store well and flavors improve over time.
