Description

A rich and savory beef stew filled with tender chunks of beef and hearty vegetables, perfect for cold winter evenings.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the beef and brown on all sides.
  3. Stir in the onions and garlic, and cook until softened.
  4. Add the tomato paste, thyme, salt, and pepper, and mix well.
  5. Pour in the beef broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 1 hour.
  7. Add the potatoes and carrots, and continue to cook for an additional 2-3 hours until the beef is tender and vegetables are cooked through.
  8. Serve hot.

Feel free to personalize the recipe with different herbs or vegetables. Garnish with parsley for added color.
