Ingredients

- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the beef and brown on all sides.
- Stir in the onions and garlic, and cook until softened.
- Add the tomato paste, thyme, salt, and pepper, and mix well.
- Pour in the beef broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour.
- Add the potatoes and carrots, and continue to cook for an additional 2-3 hours until the beef is tender and vegetables are cooked through.
- Serve hot.

Feel free to personalize the recipe with different herbs or vegetables. Garnish with parsley for added color.
