Description

A hearty and comforting beef stew filled with tender chunks of beef, fresh vegetables, and rich flavors that warm the soul.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium-high heat. Brown the beef pieces on all sides, then remove from the pot and set aside.
  2. In the same pot, add the onions and garlic, sauté until soft.
  3. Stir in the tomato paste and cook for another minute.
  4. Return the beef to the pot, add beef broth, carrots, potatoes, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 120 minutes or until the beef is tender.
  6. Remove the bay leaf before serving. Enjoy your hearty beef stew!

Notes

For added flavor, consider using homemade beef broth or incorporating fresh herbs like parsley or thyme at the end of cooking.
