Description

A comforting dish of beef tips simmered with onions and garlic, served over fluffy rice.

Ingredients

Scale
  • 1 lb beef tips (sirloin or chuck)
  • 1 cup long-grain white or brown rice
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tbsp cornstarch
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)

Instructions

  1. Gather all ingredients. Dice onion and mince garlic.
  2. In a large skillet, heat a splash of oil over medium heat.
  3. Add beef tips to the skillet and sear until browned on all sides, about 5-7 minutes.
  4. Introduce onions and garlic to the skillet, stirring until onions are translucent, approximately 3-4 minutes.
  5. Pour in the beef broth, scraping any bits off the pan bottom. Let it simmer for about 10 minutes.
  6. Mix cornstarch with cold water until smooth, then stir into the skillet to thicken the gravy.
  7. While the gravy thickens, cook the rice according to package instructions (15-20 minutes).
  8. Serve the beef tips over fluffy rice and enjoy!

Notes

Consider marinating the beef for an hour for enhanced flavor. Fresh herbs can be added during simmering for added aroma.
