Ingredients

- 1 lb beef tips (sirloin or chuck)
- 1 cup long-grain white or brown rice
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 2 tbsp cornstarch
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
Instructions
- Gather all ingredients. Dice onion and mince garlic.
- In a large skillet, heat a splash of oil over medium heat.
- Add beef tips to the skillet and sear until browned on all sides, about 5-7 minutes.
- Introduce onions and garlic to the skillet, stirring until onions are translucent, approximately 3-4 minutes.
- Pour in the beef broth, scraping any bits off the pan bottom. Let it simmer for about 10 minutes.
- Mix cornstarch with cold water until smooth, then stir into the skillet to thicken the gravy.
- While the gravy thickens, cook the rice according to package instructions (15-20 minutes).
- Serve the beef tips over fluffy rice and enjoy!
Notes
Consider marinating the beef for an hour for enhanced flavor. Fresh herbs can be added during simmering for added aroma.
