Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 cups cooked rice
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Brown the cubed beef on all sides.
  2. Add chopped onion, carrots, celery, and garlic; sauté until vegetables are softened.
  3. Stir in beef broth, tomato paste, bay leaves, thyme, and season with salt and pepper.
  4. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours until beef is tender.
  5. Remove bay leaves before serving.
  6. Serve the stew over cooked rice and garnish with fresh parsley.

Notes

For a thicker stew, let it reduce without a lid during the last half hour of cooking. Flavors improve if the stew sits for a few hours or overnight.
