- 2 pounds beef chuck, cut into cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 cups cooked rice
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Brown the cubed beef on all sides.
- Add chopped onion, carrots, celery, and garlic; sauté until vegetables are softened.
- Stir in beef broth, tomato paste, bay leaves, thyme, and season with salt and pepper.
- Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours until beef is tender.
- Remove bay leaves before serving.
- Serve the stew over cooked rice and garnish with fresh parsley.
Notes
For a thicker stew, let it reduce without a lid during the last half hour of cooking. Flavors improve if the stew sits for a few hours or overnight.
