- 1 oz packet beefy onion soup mix
- 4 garlic cloves, minced
- 1/2 tsp dried rosemary
- 1 large onion, thinly sliced
- 1 tsp dried thyme
- 1 tsp black pepper
- 2 cans (10.5 fl oz each) condensed French onion soup
- 2 tbsp vegetable oil
- 1/2 cup unsalted butter, thinly sliced
- 1 tsp kosher salt
- 1 chuck roast (2 to 3 lb, room temperature)
- 1/4 cup water
- Chopped parsley for garnish
- 2 tbsp cornstarch (slurry with water)
Instructions
- Sprinkle the minced garlic, dried rosemary, and thyme over the roast.
- Pour the packets of beefy onion soup mix and the two cans of French onion soup directly over the roast.
- Add the thinly sliced onions around the roast, then place the sliced butter on top.
- Pour in the 1/4 cup of water to provide necessary moisture.
- Cover with the lid and set your crock pot to low.
- Cook for 8-10 hours or until the roast is fork-tender.
- Mix the cornstarch with a little water to create a slurry in the last hour, and stir this into the pot.
- Let it cook uncovered for the final hour to thicken the sauce.
Notes
For added flavor, consider adding carrots or potatoes. Adjust seasoning before serving to balance the flavors.
