Ingredients

- 3–4 lbs beef chuck roast
- 1 onion, sliced
- 4 cloves garlic, minced
- 4 carrots, cut into chunks
- 3 potatoes, cut into chunks
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
Instructions
- Place the sliced onions in the bottom of the crockpot.
- Season the beef chuck roast with salt, pepper, thyme, and rosemary, then place it on top of the onions.
- Add the minced garlic, carrots, and potatoes around the roast.
- Pour the beef broth and Worcestershire sauce over the top.
- Cover the crockpot and cook on low for 480 minutes or high for 300 minutes, until the meat is tender.
- Serve the roast with the vegetables.
Notes
Optional: Brown the roast briefly before placing it in the crockpot for added flavor.
