- 1 tablespoon olive oil
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 pound ground beef
- 1 tablespoon tomato paste
- 1 can (28 oz) crushed tomatoes
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 6 cups beef broth
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until soft, about 4–5 minutes. Stir in garlic and cook until fragrant.
- Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
- Stir in tomato paste, crushed tomatoes, Italian seasoning, red pepper flakes (if using), salt, and pepper. Let simmer for 5 minutes.
- Pour in beef broth and bring to a boil. Add broken lasagna noodles and simmer until tender, about 10–12 minutes.
- Stir in ricotta and half of the mozzarella. Let it melt into the soup.
- Ladle soup into bowls, top with the remaining mozzarella and parmesan, and garnish with fresh basil or parsley.
Notes
For additional creaminess, reserve some mozzarella to mix into the soup before serving. Customize by adding vegetables like spinach or bell peppers.
