- 2 pounds chuck roast, cut into 1-inch cubes
- 4 large potatoes, peeled and cut into chunks
- 3 large carrots, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
Instructions
- Heat a skillet over medium-high heat. Add a touch of oil and sear the beef in batches until browned on all sides. Transfer the beef to the slow cooker.
- Add the potatoes, carrots, onion, and garlic to the slow cooker, layering them atop the beef.
- In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour this mixture over the ingredients in the slow cooker.
- Cover the slow cooker with the lid. Cook on low for 6-8 hours or on high for 3-4 hours, until the beef is fork-tender.
- Stir gently to combine before serving. Enjoy a piping hot bowl of your luscious beef stew.
Notes
For thicker stew, use a cornstarch slurry or flour towards the end of cooking. Fresh herbs like parsley can add a nice finish.
