Deliciously crispy flautas filled with spicy jalapeno, creamy cheese, and flavorful ground meat.

- 1 pound ground venison (or ground beef)
- 2 jalapenos, halved and diced
- 1/2 cup yellow onion, diced
- 2 tablespoons minced garlic
- 1 teaspoon salt (plus extra for sprinkling)
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 cup mild salsa
- 8 ounces cream cheese, softened and cut into 1-inch cubes
- 2 cups shredded Monterey Jack cheese
- 18 soft taco-sized flour tortillas
- 1 cup vegetable oil for frying
Instructions
- Prepare the jalapenos by cutting them in half lengthwise and scooping out the seeds.
- Combine the ground venison or beef, diced jalapenos, and onions in a large skillet over medium heat.
- Cook for about 5 minutes until the onions soften and the meat is browned.
- Add the minced garlic and sauté for one more minute.
- Sprinkle in the spices: salt, black pepper, ground cumin, smoked paprika, and dried oregano.
- Pour in the salsa and add the cream cheese, stirring until melted.
- Incorporate the shredded Monterey Jack cheese and mix well.
- Assemble the flautas by placing 1/4 cup of filling at the bottom third of each tortilla and rolling tightly.
- Heat vegetable oil in a cast iron skillet over medium-high heat until it reaches 350°F.
- Fry each flauta for about 2 minutes until golden brown on all sides.
- Remove from oil and sprinkle with salt while hot.
- Serve hot with salsa or guacamole.
Notes
For a lighter version, try baking the flautas instead of frying. Adjust spice levels by varying jalapeno amounts.
