Ingredients

  • 1/4 cup powdered sugar
  • 1 cup all-purpose flour
  • Pinch salt
  • 3 large eggs
  • 1 cup granulated sugar + 2 tablespoons granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup all-purpose flour (sifted)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the 1 cup of flour and a pinch of salt, mixing until just combined.
  4. Press the dough evenly into the bottom of the prepared pan.
  5. Bake the crust for about 13-14 minutes, or until the edges are slightly golden brown. Remove from the oven.
  6. While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and sifted flour in another bowl until smooth.
  7. Pour the lemon mixture over the warm baked crust, spreading it out evenly.
  8. Return the pan to the oven and bake for an additional 20-22 minutes, or until the filling is set and the edges are lightly golden brown.
  9. Remove from the oven and let the bars cool completely in the pan.
  10. Dust the top with powdered sugar once cooled, lift out using the parchment overhang, and slice into squares. Enjoy!
