Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked orzo pasta
  • 4 cups low-sodium chicken broth
  • 1/2 cup freshly squeezed lemon juice (about 23 lemons)
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups baby spinach, roughly chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large pot or Dutch oven, bring the chicken broth to a boil over high heat.
  2. Add the orzo and cook for 7-9 minutes, or until al dente. Drain and set aside.
  3. In the same pot, add the chicken, lemon juice, garlic, thyme, salt, and pepper. Bring to a simmer and cook for 8-10 minutes or until the chicken is cooked through.
  4. Stir in the cooked orzo, spinach, and parsley. Cook for an additional 2-3 minutes or until the spinach is wilted.
  5. Taste and adjust seasoning as needed. Serve hot and enjoy!

Notes

For a creamier texture, stir in Greek yogurt at the end. Garnish with parsley or lemon slices before serving.
