- 3 pounds russet or Yukon gold potatoes
- 1 stick + 2 tablespoons unsalted butter, divided
- 7 cloves garlic, smashed
- 3/4 cup warm heavy cream
- 3/4 cup sour cream
- 1 teaspoon salt, plus more to taste
Instructions
- In a small saucepan, melt 1 stick of butter over low heat; skim off white milk solids and add smashed garlic. Cook for about 15 minutes.
- Add prepared potatoes to a medium pot, cover with water, and season with salt. Bring to a boil, then simmer for about 20 minutes until fork-tender.
- Drain the potatoes thoroughly and let them sit for a few minutes; blot with a dry paper towel.
- Pass the hot potatoes through a ricer back into the pot.
- Pour warm melted butter and heavy cream over the riced potatoes; whip with a hand-held mixer until creamy, about 2-3 minutes.
- Add sour cream and mix on low for another minute. Season to taste.
- Transfer to a serving dish, pour remaining butter on top, and garnish with paprika and parsley.
Notes
For a rustic mash, save the potato skins. Experiment with flavors by adding herbs or adjusting cream for desired consistency.
