Ingredients

  • 3 to 4 lbs chuck roast
  • 2 cups low-sodium beef broth
  • 4 large carrots, chopped
  • 4 medium Yukon Gold potatoes, quartered
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh rosemary (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Season both sides of the chuck roast with salt and pepper.
  2. Heat a skillet and sear the roast for about 3-4 minutes on each side until browned.
  3. Layer the seared chuck roast at the bottom of the crock pot.
  4. Add the chopped carrots, quartered potatoes, sliced onions, and minced garlic on top.
  5. Sprinkle fresh thyme and rosemary over the vegetables.
  6. Pour in enough beef broth to cover the vegetables while leaving some roast exposed.
  7. Cover the crock pot and cook on low for 8 hours or high for 4 hours.

Notes
