Ingredients

- 3 to 4 lbs chuck roast
- 2 cups low-sodium beef broth
- 4 large carrots, chopped
- 4 medium Yukon Gold potatoes, quartered
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 tsp fresh rosemary (or 1 tsp dried)
- Salt and pepper to taste
Instructions
- Season both sides of the chuck roast with salt and pepper.
- Heat a skillet and sear the roast for about 3-4 minutes on each side until browned.
- Layer the seared chuck roast at the bottom of the crock pot.
- Add the chopped carrots, quartered potatoes, sliced onions, and minced garlic on top.
- Sprinkle fresh thyme and rosemary over the vegetables.
- Pour in enough beef broth to cover the vegetables while leaving some roast exposed.
- Cover the crock pot and cook on low for 8 hours or high for 4 hours.
Notes
For enhanced flavor, let the seasoned roast rest for at least an hour before searing. You can experiment with different vegetables and herbs.
