- 4 tablespoons butter
- 2 tablespoons olive oil
- 1 cup chopped celery (about 2–3 stalks)
- 1 tablespoon minced garlic
- 1 cup shredded carrots
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons onion powder
- 1 tablespoon Italian seasoning
- 1/4 cup flour
- 3 cups chicken broth
- 3 cups milk
- 1.5 cups heavy cream
- 2 cups cooked shredded chicken (from 2 legs and 2 thighs)
- 8 ounces chopped frozen spinach
- 16 ounces gnocchi
Instructions
- In a large pot over medium heat, melt the butter and heat the olive oil.
- Once the butter melts, add the chopped celery and cook for about 5-10 minutes until it becomes soft.
- Add in the minced garlic and stir, allowing it to cook for 2 minutes.
- Toss in the shredded carrots, salt, black pepper, onion powder, and Italian seasoning.
- Gradually add the flour and stir until everything combines nicely.
- Continue stirring and cook the flour mixture for an additional 2 minutes.
- Pour in the chicken broth and stir thoroughly to break up any clumps.
- Add the milk and heavy cream, stirring until smooth.
- Dump in the frozen spinach and shredded chicken, stirring to incorporate.
- Turn up the heat and bring the soup to a boil.
- Gently add the gnocchi to the boiling soup and cook for 4-5 minutes.
- Serve hot or warm and enjoy!
Notes
For added creaminess, increase the heavy cream. Store leftovers in an airtight container for up to three days.
