A vibrant and refreshing salsa made with black beans, corn, and fresh vegetables, perfect for snacking or as a topping.

Ingredients

Scale
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black beans, corn, bell pepper, red onion, jalapeño (if using), and cilantro.
  2. Squeeze the lime juice over the mixture and season with salt and pepper.
  3. Stir well to combine all ingredients.
  4. Let sit for at least 30 minutes to allow flavors to meld.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

For best flavor, let the salsa sit for at least 30 minutes before serving. Add fresh cilantro just before serving to maintain its brightness.
