Ingredients

  • 1 cup rice
  • 1 lb sausage, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the sliced sausage and cook until browned.
  5. Stir in the cumin, smoked paprika, salt, and pepper.
  6. Mix in the rice, black beans, and broth.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
  8. Fluff with a fork and serve garnished with fresh cilantro if desired.
