- 1 cup (240 ml) fresh blackberries (150 grams)
- 4 slices beef bacon
- 4 brioche burger buns
- 4 ounces (113 g) feta cheese (115 grams)
- 1/4 cup (60 ml) mayonnaise (60 milliliters)
- 1 tablespoon (15 ml) Dijon mustard (15 milliliters)
- 1 tablespoon (15 ml) honey (15 milliliters)
- 1 teaspoon (5 ml) garlic powder (5 grams)
- 1/2 teaspoon (3 ml) salt (3 grams)
- 1/2 teaspoon (3 ml) black pepper (1.5 grams)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 cup (240 ml) arugula (30 grams)
Instructions
- Preheat your grill or stovetop grill pan to medium-high heat.
- Cook the beef bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
- In a large bowl, combine ground venison, garlic powder, salt, and black pepper. Mix gently until combined.
- Form the venison mixture into four equal patties.
- Brush the patties lightly with olive oil.
- Grill the patties for 4-5 minutes on each side, or until desired doneness.
- While the patties cook, slice the brie cheese into thin slices.
- In a small bowl, mix mayonnaise, Dijon mustard, and honey until smooth. Set aside.
- Lightly toast the brioche buns on the grill for 1-2 minutes.
- Place a slice of brie on each venison patty during the last minute of cooking to melt slightly.
- Assemble the burgers by spreading the honey mustard mayonnaise on the bottom half of each bun.
- Add a handful of arugula on top of the mayonnaise.
- Place the venison patty with melted brie on the arugula.
- Top each patty with a few fresh blackberries and a slice of crispy bacon.
- Cover with the top half of the brioche bun.
- Serve the burgers immediately.
