  • 1 tablespoon (15 ml) Dijon mustard (15 milliliters)
  • 1 tablespoon (15 ml) honey (15 milliliters)
  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1/2 teaspoon (3 ml) salt (3 grams)
  • 1/2 teaspoon (3 ml) black pepper (1.5 grams)
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 cup (240 ml) arugula (30 grams)

Instructions

  1. Preheat your grill or stovetop grill pan to medium-high heat.
  2. Cook the beef bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
  3. In a large bowl, combine ground venison, garlic powder, salt, and black pepper. Mix gently until combined.
  4. Form the venison mixture into four equal patties.
  5. Brush the patties lightly with olive oil.
  6. Grill the patties for 4-5 minutes on each side, or until desired doneness.
  7. While the patties cook, slice the brie cheese into thin slices.
  8. In a small bowl, mix mayonnaise, Dijon mustard, and honey until smooth. Set aside.
  9. Lightly toast the brioche buns on the grill for 1-2 minutes.
  10. Place a slice of brie on each venison patty during the last minute of cooking to melt slightly.
  11. Assemble the burgers by spreading the honey mustard mayonnaise on the bottom half of each bun.
  12. Add a handful of arugula on top of the mayonnaise.
  13. Place the venison patty with melted brie on the arugula.
  14. Top each patty with a few fresh blackberries and a slice of crispy bacon.
  15. Cover with the top half of the brioche bun.
