Ingredients

  • 2 lbs venison chops (900 g)
  • 1 cup blackberries (150 g)
  • 2 tablespoon s chipotle peppers in adobo sauce, finely chopped (30 g)
  • 2 tablespoon s olive oil (30 ml)
  • 1 tablespoon honey (15 ml)
  • 1 tablespoon apple cider vinegar (15 ml)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin (2.5 g)
  • 1 teaspoon smoked paprika (2.5 g)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. In a small saucepan, combine blackberries, chipotle peppers, honey, and apple cider vinegar.
  3. Cook the mixture over medium heat until the blackberries break down, about 5-7 minutes.
  4. Remove from heat and allow to cool slightly.
  5. Once cooled, use a blender or food processor to puree the blackberry mixture until smooth.
  6. Strain the sauce through a fine mesh sieve to remove seeds, and set aside.
  7. Pat the venison chops dry with paper towels.
  8. In a small bowl, mix olive oil, minced garlic, ground cumin, smoked paprika, salt, and black pepper.
  9. Rub the spice mixture evenly over both sides of the venison chops.
  10. Lightly oil the grill grates or a grill pan.
  11. Place the venison chops on the grill or grill pan.
  12. Cook the chops for 4-5 minutes per side, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  13. Brush the chops with the blackberry-chipotle sauce during the last minute of cooking on each side.
  14. Remove the venison chops from the grill and let them rest for 5 minutes.
  15. Serve the venison chops with additional blackberry-chipotle sauce on the side.
