  • 3 tablespoons (45 ml) maple syrup (45 milliliters)
  • 2 tablespoons (30 ml) tamari sauce (30 milliliters)
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) ground coriander (2.1 grams)
  • 1 teaspoon (5 ml) smoked paprika (2.3 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 1 red onion, cut into 1-inch pieces
  • 1 bell pepper, cut into 1-inch pieces
  • Wooden or metal skewers

Instructions

  1. In a blender, combine blackberries, habanero, olive oil, honey, soy sauce, lime juice, garlic, cumin, and smoked paprika.
  2. Blend until smooth to create a marinade.
  3. Season the venison cubes with salt and black pepper to taste.
  4. Pour half of the marinade over the venison cubes in a bowl.
  5. Mix well to ensure even coating and marinate for at least 1 hour in the refrigerator.
  6. Preheat grill to medium-high heat.
  7. Thread marinated venison, red onion pieces, and bell pepper pieces alternately onto skewers.
  8. Grill the kebabs for about 8-10 minutes, turning occasionally, until the venison is cooked to desired doneness.
  9. Brush the reserved marinade over the kebabs during the last few minutes of grilling.
  10. Remove the kebabs from the grill and let them rest for a few minutes before serving.
