  • 4 boneless skinless chicken breasts
  • 2 tsp (10 ml) s oregano or Italian seasoning
  • 1 tsp (5 ml) garlic powder
  • Sea salt and pepper, to taste
  • 1 cup (240 ml) fresh blackberries, very slightly smashed with a fork
  • 4 small jalapeno peppers, sliced, most seeds removed
  • 4 thick slices mozzarella or provolone cheese
  • 2 Tbsp (30 ml) s avocado oil, grass-fed butter, green, unrefined coconut oil, or olive oil
  • 1/2 cup (120 ml) your favorite dry white grape juice, or chicken bone broth
  • Handful of fresh parsley or basil, chopped

Instructions

  1. Set your oven to 375 degrees Fahrenheit to preheat.
  2. Coat the chicken breasts with a mixture of oregano, garlic powder, sea salt, and pepper on all surfaces.
  3. Cut a slit lengthwise in each chicken breast, ensuring not to cut all the way through, to form a pocket for filling.
  4. Evenly distribute the cheese slices and jalapeño slices into the pockets, followed by spooning in the lightly crushed blackberries.
  5. Use toothpicks to secure the openings if necessary.
  6. Warm the oil in a large skillet that can go in the oven, over medium heat. Sear the chicken until it achieves a rich golden-brown on both sides, approximately 4 minutes per side.
  7. Pour the white grape juice or chicken bone broth into the skillet to deglaze and enhance the flavor, then place the skillet in the oven.
  8. Roast in the preheated oven for 12-15 minutes, or until the chicken reaches an internal temperature of 165°F (73.9°C) as checked with a food thermometer.
  9. Finish by sprinkling freshly chopped parsley or basil on top.
