- 2 cups full-fat cottage cheese
- 3 large eggs, room temperature
- 3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups fresh blueberries
- Zest of one lemon
- 1 tablespoon lemon juice
- Optional: 1/4 teaspoon cinnamon
- Optional: 2 tablespoons ground flaxseed
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- Combine cottage cheese, eggs, honey or maple syrup, and vanilla extract in a large bowl.
- Fold in flour, baking powder, and salt.
- Gently mix in lemon zest, lemon juice, and 1½ cups of blueberries.
- Pour mixture into prepared baking dish and top with remaining ½ cup blueberries.
- Bake for 45-50 minutes until center is set and top is golden brown.
- Allow to cool for 10 minutes before serving.
