Ingredients

  • 2 cups full-fat cottage cheese
  • 3 large eggs, room temperature
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups fresh blueberries
  • Zest of one lemon
  • 1 tablespoon lemon juice
  • Optional: 1/4 teaspoon cinnamon
  • Optional: 2 tablespoons ground flaxseed

Instructions

  • Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  • Combine cottage cheese, eggs, honey or maple syrup, and vanilla extract in a large bowl.
  • Fold in flour, baking powder, and salt.
  • Gently mix in lemon zest, lemon juice, and 1½ cups of blueberries.
  • Pour mixture into prepared baking dish and top with remaining ½ cup blueberries.
  • Bake for 45-50 minutes until center is set and top is golden brown.
  • Allow to cool for 10 minutes before serving.
