Ingredients

  • 1½ cups (370g) plain Greek yogurt (2% or full-fat)
  • 1 tablespoon honey or maple syrup (or erythritol for a keto-friendly version)
  • ½ teaspoon vanilla extract
  • ¾ cup (100g) fresh or frozen blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Cook for 5–6 minutes, stirring frequently, until softened and jam-like consistency.
  2. Remove from heat and mix in chia seeds if using. Let cool completely.
  3. Make the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, vanilla extract, and honey until smooth. Adjust sweetness as needed.
  4. Assemble the Bites: Spoon about 1 tablespoon of yogurt into each cavity of a silicone tray, filling ¾ full. Add ½ teaspoon of cooled blueberry compote and swirl gently.
  5. Freeze: Place the tray in the freezer for at least 2 hours, or until firm.
  6. Serve: Carefully remove from the molds and store in an airtight container in the freezer. Thaw slightly before serving.

These bites can be stored in the freezer for up to a month. Let them thaw slightly before enjoying for the best texture.
