- 1/2 cup pecans, chopped
- 1/2 cup dried cranberries
- 1/2 cup feta cheese
- 1/2 cup fresh blueberries
- 1 tablespoon olive oil
- 1 tablespoon water
- 3 tablespoons honey
- 2 tablespoons balsamic vinegar
Instructions
- Rinse the fresh spinach leaves thoroughly under cold water and pat them dry.
- Roughly chop the pecans and measure the dried cranberries.
- Crumble the feta cheese into small bits.
- Toss the spinach, pecans, cranberries, feta cheese, and blueberries together in a large bowl.
- In a mason jar, combine the olive oil, water, honey, and balsamic vinegar, seal tightly, and shake vigorously to emulsify.
- If serving immediately, pour the dressing over the salad and gently toss to coat.
Notes
