Ingredients

  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese
  • 1/2 cup fresh blueberries
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar

Instructions

  1. Rinse the fresh spinach leaves thoroughly under cold water and pat them dry.
  2. Roughly chop the pecans and measure the dried cranberries.
  3. Crumble the feta cheese into small bits.
  4. Toss the spinach, pecans, cranberries, feta cheese, and blueberries together in a large bowl.
  5. In a mason jar, combine the olive oil, water, honey, and balsamic vinegar, seal tightly, and shake vigorously to emulsify.
  6. If serving immediately, pour the dressing over the salad and gently toss to coat.
