  • 1 tablespoon (15 g) onion powder
  • 1 tablespoon (15 g) smoked paprika
  • 1 teaspoon (5 g) black pepper
  • 1 teaspoon (5 g) chili powder
  • 1 teaspoon (5 g) ground beef pepper (optional for extra heat)
  • 1/2 teaspoon (2.5 g) ground cumin
  • 1/2 teaspoon (2.5 g) ground coriander
  • 1/4 teaspoon (1.25 g) dried thyme
  • 1/4 teaspoon (1.25 g) dried oregano
  • 1/4 teaspoon (1.25 g) salt

Instructions

  1. Slice the game meat into thin strips, about 1/4 inch thick.
  2. In a large bowl, combine brown sugar, soy sauce, and Worcestershire sauce.
  3. Add garlic powder, onion powder, and smoked paprika to the bowl.
  4. Mix in black pepper, chili powder, and cayenne pepper if using.
  5. Stir in ground cumin, ground coriander, dried thyme, and dried oregano.
  6. Add salt and mix all marinade ingredients until well combined.
  7. Place the meat strips into the marinade, ensuring they are fully submerged.
  8. Cover the bowl and refrigerate for at least 4 hours or overnight.
  9. Preheat your smoker to 165°F (74°C).
  10. Remove the meat from the marinade and pat dry with paper towels.
  11. Arrange the meat strips on smoker racks, leaving space between each strip.
  12. Smoke the jerky for 4 to 6 hours, or until dry but still slightly pliable.
  13. Check for doneness by bending a piece; it should not snap.
  14. Remove the jerky from the smoker and let it cool completely.
  15. Store the jerky in an airtight container or vacuum-sealed bag.
